Shrimp Scampi

  • 1lb shrimp cook shelled and deveined
  • 4 cloves garlic, minced
  • 1 bunch parsley chopped finely
  • 1/8 Cup olive oil
  • 1 small onion chopped
  • 1/2 lb Tinkyada gluten free spaghetti noodles - Cook following instructions on package. Rinse well and set aside.

    Heat olive oil in a skillet saute onion until translucent, add minced garlic, parsley, salt to taste. Stir over low heat. Add shrimp and cook for 3 minutes. Let sit off heat and rinse cooked noodles. Strain well. Add noodles to skillet, toss and serve.
