Meatloaf - Italian Seasonings
2 lbs hamburger
1/2 chopped medium onion
1 Cup chopped or finely shredded carrot
1 Cup finely chopped spinach
1/2 to 3/4 Cup catsup
1 Tablespoon of Italian Seasoning blend (Tones spaghetti spice is gluten free)
1/2 to 1 Tablespoon of minced garlic
2 teaspoons of salt
1 teaspoon pepper
2 eggs
Mix together with a wooden spoon (if preparing stuffed tomatoes, see recipe and reserve portion of meatloaf pre cooked). Place in a 9 inch deep pie plate or 8x8 inch pan. Mound into a ball, leaving space on the edges during cooking.
Bake at 350 degrees for 50 minutes to 1 hour.
