Cabbage and Carrots (Indian spices)
Ingredients:
1 medium cabbage chopped (not too fine, you don't want shredded!)
1 small bunch carrots cleaned and chopped (save some of the greens for garnish)
1 small onion chopped
olive oil to coat bottom of large pan/pot
1/2 tsp ginger
1 tsp cumin
1 tsp coriander
1/2 tsp garam masala
1/2 tsp tumeric
dash of pepper
1. sauté onions in oil until translucent
2. add spices and stir well
3. add veggies, put on lid and toss so that veggies are lightly coated in oil/spice mixture
4. cook on a medium heat with lid for 15-30 minutes or until tender.
Don't want to overcook!
